The chameleon of chile peppers? Red, green and yellow are common, but blue? Why not. The idea is to get a little attention and add some color to a wall. If someone asks about the blue, just reply that this is a special variety that comes in mild, hot and cold. This pepper was actually only 3 or 4 inches long, grown in a portable cart garden. It’s from a variety of chile pepper in New Mexico named Big Jim. In this case, “Mini Jim” might be more appropriate. Big Jim chiles often grow to a foot long or sometimes even longer, and are a medium hot flavor. Chile is endemic to New Mexico and its people to the extent that the state question at a restaurant is, “Red or green?” Chameleon does not do green, because that’s boring.
